You know when you are craving fluffy pancakes but can’t be bothered with the recipes where you have to whip the egg whites separately well this recipe is it!

The addition of ricotta makes the pancakes super fluffy and soft

Devour with any toppings you like, I did berries and a quick mascarpone cream made by whipping mascarpone cheese, vanilla, icing sugar to taste and s bit of cream to loosen. You can also add lemon or orange zest. It makes a really nice combo with the pancakes.
Other toppings that would be good are Nutella and bananas
Lotus and bananas
Strawberries and salted caramel

The options are endless and equally delicious!

 1.50 cups all purpose flour
 3.50 tbsp sugar
 2 tsp baking powder
 ¼ tsp bicarbonate soda/baking soda
 ¾ cup 180g ricotta
 3 qts eggs
 1 tsp vanilla
 zest of 1 lemon
 2 tbsp melted butter
 ½ cup milk

Method:

Whisk all the dry ingredients together

Whip in all wet ingredients

Place in a mixture of oil and butter in a pan and add spoonfuls of batter to the pan, you may need to spread the batter out into circles

Enjoy with your favourite toppings!!
